30 Days to Amplify, Simplify, Detoxify, Optimize! Resources

If you know of someone who has a SCOBY to give you, this is a good idea, but starting from scratch is the cleanest, best way to go since SCOBYs can get old.

Week 2- Substituting and Tweaking Foods to Optimize Nutrient Value of Your Favorite Foods!

One of my FAVORITE tweaks is this bread!  It is yummy, makes pretty good sandwiches and I feel good about feeding it to my kids, if not daily, then a few times a week:
 It comes in several flavors and SHOULD be kept cold if not frozen.  Also available at Raley’s, Whole Foods, and most higher quality grocers.

Sourdough

As for sourdoughs, this is a tricky one.  It is VERY difficult to find REAL sourdough at the store.  The trend is so on the rise, that companies are using gimmicks to suck you in.  So I have done a LOT of research and it is still hard.  But here is one:  (expensive and comes in a pack of 6- but at least you get the idea):

Here are some Sourdough Rules of Thumb from Sarah, The Healthy Home Economist:

Here are some rules of thumb to identify authentic sourdough bread:

  • A handful of ingredients
  • No yeast
  • Cultured flour starter
  • No sweetener
  • Made using whole grain flour
  • Dough is fermented before baking for at least 4-6 hours
  • {my additions:  NO VINEGAR AND NO CITRIC ACID FOR “SOUR FLAVOR”}

After examining the label, if you are still unsure, a phone call or email to the company is a good idea. Ask how long the sourdough is allowed to rise (double in size) before baking. A true sourdough is going to rise for a minimum of about 4-6 hours and even as long as 10-15 hours depending on the temperature. If the whole grain dough is properly fermented, no yeast is ever needed and sweeteners should never be used.

 

Although it is time-consuming, making your own sourdough bread is the best way to have authentic fermented bread.  It is worth trying once.  This company provides the starter culture and LOTS of instruction.  The starter comes with great instructions and their website is also great:
My suggestion if you try this at home is to stick to organic WHITE WHEAT FLOUR.  The fancier flours just don’t make a nice, light, fluffy bread.   I once tried organic red fife flour, and the bread turned out like a brick.

 

WEEK 4- Detoxify!

Here are the best brands according to the Environmental Working Group.  The rating is: #1 is best, cleanest, least toxic; the higher the number, the worse it is.  I stopped at 3-4.  Check them out  here and enter any brand you are wondering about and see the rating!  Most of these brand’s products will all fall under the ratings I’ve listed below.  For example, all of Dr. Bronner’s Castille soaps are a #1-2 Rating.  However, if you use Burt’s Bees lotion with fragrance, you will likely have a worse rating than the Fragrance-free Shampoo I reference below.  Fragrance is a BIGGY that brings these products Down the list. Natural, Essential Oils as fragrance are ok. Anything in the ingredients list that just says “fragrance” is a NO-NO.   Play around searching your favorite products!

DIY Laundry Detergent with Essential Oil by famousfarmgirl.com

  1. 3 bars Fels Naptha Soap
  2. 3 cups Borax
  3. 3 cups Washing Soda
  4. 1 cup baking soda
  5. 4 1/2 cups oxygen bleach powder
  6. 2 cups kosher salt
  7. 40-45 drops of your favorite essential oil (recommendations: Purity (doterra), lemon, citrus, lavender)

Instructions: grate the soap in a cheese grater or food processor into small pieces. Mix all ingredients together until homogenous and not clumpy. Store in a sealed container.  Use 1-3 TBPS per load.  Makes a lot!

  2. 1/4 cup baking soda OR 2 TBS Washing soda

Added at the beginning of the wash cycle.

All of most of these lines is a 1 Rating except Aveeno and Neutrogena.  Check EWG for ratings.
